Dr. Manfred Eggersdorfer is Senior Vice President for Nutrition Science & Advocacy at DSM. DSM Nutritional Products is the world leader in vitamins, carotenoids and nutritional ingredients for Human Nutrition, Animal Nutrition and Personal Care.

Prior to DSM, Manfred Eggersdorfer was working for BASF, Ludwigshafen in different positions including Head of Research and Development Fine Chemicals.

Manfred Eggersdorfer studied chemistry at the Technical University Munich and did his PhD in organic chemistry in the field of synthesis and characterization of unusual amino acid. He was post-doc at the Stanford-University, California working with Carl Djerassi on the isolation and characterization of sterols from marine origin.

Further Manfred Eggersdorfer is active as honorary professor at the Faculty of Medical Sciences at the University of Groningen. He is member of the Advisory Board of the Johns Hopkins Bloomberg School of Public Health, of the Fraunhofer-Gesellschaft Curatorial for Innovation, and affiliate of various other organizations. Research Interest :

Dr. Yamaguchi is engaged in the fields of bone and calcium endocrinology and cell calcium signaling since 1971, and these researches are developed in the aspect of biochemistry, molecular biology, endocrinology, metabolism, nutrition, pharmacology, and toxicology. Dr. Yamaguchi has an interesting for cell signaling mechanism, bone biology, nutritional factor and osteoporosis prevention, diabetic osteoporosis, and cancer bone metastasis and osteolysis. Moreover, Dr. Yamaguchi discovered two novel proteins and genes; cell signaling suppressor protein (named regucalcin; 1978) and transcriptional factor RGPR-p117 (regucalcin gene promoter region-related protein; 2001) in mammalian cells. Dr. Yamaguchi generated regucalcin transgenic rats, which were registered as international patents (USA, EU, Japan, and Korea), and this animal is found to induce osteoporosis and hyperlipidemia. The research of regucalcin is focused as a scientific topic. Dr. Yamaguchi published over 500 English articles to professional journals with peer-review. In addition, Dr. Yamaguchi registered over 20 national and international patents in the fields of his research interesting.

Biography :

Dr. Diamond obtained his Ph.D. in biochemistry from the State University of New York at Stony Brook where he characterized the central component of the cellular machinery that generates selenium-containing proteins. He extended his training to cancer biology as a Post-Doctoral Fellow at the Dana Farber Cancer Institute/Harvard Medical School. He became an Associate Professor in the Department of Radiation Oncology at the University of Chicago before moving to the University of Illinois at Chicago in the Department of Human Nutrition where he became a Professor and served as Department Head. Dr. Diamond is currently a Professor in the Department of Pathology at UIC focusing his research on the biology of selenium and selenium-containing proteins.

Research Interest :

My interest in selenium began when I was a graduate student and characterized the tRNA that serves as both the site of biosynthesis of selenocysteine and the adaptor molecule that inserts that amino acid into the selenium-containing proteins during their translation. As a Post-Doctoral Fellow, I was trained in the molecular biology of cancer. These early experiences have shaped my current focus on the mechanisms by which selenium and the proteins that contain selenium impact a cell’s biology and prevent cancer. We have been working on one particular selenoprotein, glutathione peroxidase (GPx-1) an anti-oxidant enzyme that detoxifies reactive oxygen species. Human epidemiological studies have revealed that there are naturally occurring genetic variations in the GPx-1 that are associated with increased risk of cardiovascular disease and cancer. My research is now centered on understanding the molecular consequences of these variations, how they impact cancer risk and the interaction of GPx-1 with other anti-oxidant proteins.

Dr. Ilich received her advance degrees at the University of Utah and University of Zagreb/Ohio State University. She joined the Florida State University in 2006 where she came from the University of Connecticut. She is also a visiting professor at the University of Zagreb, Faculty of Food Technology and Biotechnology, Zagreb, Croatia. Her publishing activity amounts to over 100 publications including original studies,review or by request papers, book chapters/symposia volumes and numerous abstracts. Dr. Michael J. Gonzalez is a professor at the nutrition program at the Graduate School of Public Health at the Medical Sciences Campus of the University of Puerto Rico. It is also functional program faculty Medicine University of Western States in Portland, Oregon and program faculty Naturopathic Medicine EDP University in San Juan, Puerto Rico Dr. Gonzalez is a Fellow of the American College of Nutrition and author of more than 150 scientific publications. Serves as a member of several editorial boards of scientific journals and serves as a scientific consultant for various companies. He has been responsible for designing formulations of nutritional supplements and pharmaceuticals. He has won several research awards for his work on nutrition and cancer. He is currently Co - RECNAC II project director and director of research InBioMed initiative. Dr. Gonzalez also serves as a nutrition consultant for the national basketball team of Puerto Rico.
Dr. Gonzalez is a leader in the development of non-toxic cancer treatments. His group published the first-stage clinical study using intravenous vitamin C for the treatment of patients with terminal cancer in 2005 and in 2005 published the most comprehensive review on vitamin C and cancer, as a follow up of the work of two time winner of the Nobel, Dr. Linus Pauling Award. He has developed many new concepts such as bioenergetics theory of carcinogenesis, the phenomenon of systemic intravenous vitamin C saturation, the concept of metabolic correction for prevention and treatment of disease. His book (with Drs. -Massari And Saul Miranda) "I have cancer do I do?" It has received excellent reviews. Dr. Gonzalez has a clinical practice in nutritional medicine with Dr. Miguel J. Berdiel in Ponce, Puerto Rico.

Main Research Interest is the development of effective, non-toxic treatments for chronic diseases, especially cancer. Changing the biochemical conditions that promote, develop and sustain the malignant state can produce inhibition of malignant cell proliferation, increase aerobic metabolism and achieve re-differentiation. We are also interested in the development of non-toxic therapeutic strategies that enhance the effectiveness of other treatments or that reduce their toxicity. Richard P. Wedeen, MD is Professor of Medicine, and Professor of Preventive Medicine and Community Health, University of Medicine and Dentistry of New Jersey - the New Jersey Medical School, Newark, NJ, and Associate Chief of Staff for Research and Development, Department of Veterans Affairs New Jersey Health Care System, East Orange, NJ. Dr. Wedeen’s major interest has been in lead poisoning with particular focus on lead-induced hypertension and renal disease in adults. His research on lead nephropathy was initiated in 1972 with the support of Irving Selikoff, and Sheldon Samuels. He has published over 130 scientific papers and two books including a history of lead poisoning entitled, Poison in the Pot: The Legacy of Lead (Southern Illinois University Press, 1984). He defined the field of “Occupational Renal Diseases” in 1984 (Am. J. Kid. Disease. 3:241-257), and more recently chaired the committee to develop medical guidelines for the management of lead-exposed adults for the Association of Occupational and Environmental Clinics. He is a member of the Lead in Pregnancy Work Group for the Centers for Disease Control and Prevention.

Raymond R. Hyatt, Ph.D., SM, is a medical sociologist with appointments as Associate Professor in Public Health and Family Medicine in the School of Medicine and the Friedman School of Nutrition Science and Policy at Tufts University. Dr. René Rizzoli is an internist and endocrinologist, with a subspecialty focus on metabolic bone diseases, osteoporosis and disorders of mineral metabolism. He is presently professor of medicine at the University Hospital of Geneva, head of the service of bone diseases. Dr. Rizzoli is the former chairman of the Committee of Scientific Advisors of the International Osteoporosis Foundation. He is the chairman of the Scientific Advisory Board of the European Society for Clinical and Economic Aspects of Osteoporosis and Osteoarthritis, and co-chairing the scientific program committee of the annual IOF-ESCEO congress. He is involved in both basic and clinical research projects investigating hormone action, regulation of bone growth, pathophysiology of osteoporosis and of calcium and phosphate homeostasis disorders, and the role of nutrition, calcium, protein, bisphosphonates, selective estrogen modulators, parathyroid hormone, denosumab and strontium ranelate in the prevention and treatment of osteoporosis. Biography :

N. A. Michael Eskin is Professor and Associate Dean in the Department of Human Nutritional Sciences, Faculty of Human Ecology, University of Manitoba, Winnipeg, Canada. He has done extensive research on edible oils and was involved in the early development of canola oil.  Of particular note is his more recent work identifying the importance of minor components, particularly vitamin E, on the stability of edible oils. He has also worked in the area of carbohydrates, particularly yellow mustard, examining the chemical, functional and anticancer properties of its mucilage.  Dr. Eskin holds several patents and has published  over 115 research papers and 12 books including Canola: Chemistry, Production, Processing and Utilization with Jim Daun and Dave Hickling released in May, 2011 by American Oil Chemists’ Society (AOCS) Press.  His latest book, Functional Foods and Cardiovascular Disease, co-edited with Dr.  Mohammed Moghadisian, is scheduled for release in February by Taylor and Francis, USA.  The third edition of his classic book, Biochemistry of Foods, will be released by Academic Press/Elsevier later this year and is co-edited with Dr. Fereidoon Shahidi.  Dr. Eskin is the recipient of the Timothy Mounts Award by AOCS and the W.J. Eva award by the Canadian Institute of Food Science and Technology (CIFST) for outstanding research and service to the respective societies. He is a fellow of The American Oil Chemists’ Society, Canadian Institute of Food Science and Technology, and Institute of Food Science and Technology in the UK.  In May of this year he was selected as co-editor of Lipid Technology.  He continues his research on edible oils as well as the health-related properties of yellow mustard gum.

Dr. Ben-Zhan (Benny) Zhu, is a Professor of Chemistry and Toxicology in State Key Laboratory of Environmental Chemistry and Ecotoxicology, Research Center for Eco-Environmental Sciences, Chinese Academy of Sciences (CAS), Beijing, China. He has received a PhD degree in free radical biochemistry and toxicology from Hebrew University of Jerusalem, Israel, in 1999; He has completed his MS degree in organic synthesis in Lanzhou Institute of Chemical Physics, CAS, China, in 1989. His research group has integrated research themes on nutrition in five areas. The first is the relationship between micronutrients and non-communicable diseases and risk factors. The second is food bioactivity (anti-inflammation, anti-diabetes, anti-hypertension, anti-cancer, hypo-blood lipids etc) using whole foods, food ingredients, natural products, foods for health and functional foods, through in vitro studies, animal models and human clinical trials. The third is food safety evaluation, with an emphasis on the chronic safety of foods. The fourth area is the evaluation of novel foods and potential natural nutrient resources, through compositional and physiological studies. Finally, his work examines how nutrients, food ingredients and natural products influence the expression of select genes.

Dr. Nwosu is an Associate Professor of Pediatrics and Endocrinology at the University of Massachusetts Medical School in Worcester. He received his medical degree from the College of Medicine, University of Nigeria, where he now serves as a Visiting Lecturer. He completed his residency training in Pediatrics and Child Health at the Howard University Hospital in Washington DC, and obtained his fellowship training in Pediatric Endocrinology at the National Institutes of Health, in Bethesda, Maryland, USA. Biography :

Dr. Chen received his BS in Animal Science in l991 from National Taiwan University, MS in Animal Science in 1995 from Colorado State University, PhD in Human Nutrition and Exercise Science in 2001 from the Virginia Tech, and post-doctoral training in 2004 from the Jean Mayer USDA Human Nutrition Research Center on Aging at Tufts University.  Dr. Chen is now a Research Scientist in the Antioxidants Research Laboratory. His research interests range from bioavailability, metabolism, and bio-actions of phytochemicals to functional foods in health promotion and disease prevention. He is a member of American Society for Nutrition and American Chemical Society. He has authored 40 original articles, 8 review articles, and 48 conference abstracts. He has been invited to present his research findings in China, France, Malaysia, US, Singapore, and Taiwan. He is serving as an editorial member of 4 journals. He has served as a peer-reviewer for 33 journals, as well as the grant programs.

Biography :

Dr. Celeste de Jager obtained a PhD in Medicine from the University of Cape Town. She joined OPTIMA in 1998 to do neuropsychological research, initially with a cohort of cognitively healthy volunteers. She held a British Academy award for a small project on community screening for cognitive impairment in India and is the Principal Investigator in studies with Merck, plc to identify neuropsychological tests that might be more sensitive to change in AD treatment trials than those currently in use. She is also the University of Oxford PI for the Cognitive Archaeology collaborative study with Dr Peter Garrard from Southampton University. She was involved in the design of the cognitive assessment aspects of the VITACOG trial of B vitamins for those with MCI; she has presented some of the study results at the International Alzheimer’s Disease Conference (ICAD) in Hawaii and the Clinical Trials in AD (CtAD) conference in Toulouse in 2010 and the British Science Festival, 2011. Celeste represents OPTIMA as a member of the European Alzheimer’s Disease Consortium (EADC) and is an academic member the Nutrition and Cognition task force with the Institute of Life Sciences-Europe.

Research interests lie in the early diagnosis of Alzheimer’s Disease (AD) and in Mild Cognitive Impairment and associated risk factors for cognitive decline. Celeste oversees the neuropsychological assessments and test batteries conducted at OPTIMA.

Biography :

Han received a Ph.D. from the University of North Carolina in 1995 in Nutritional Biochemistry. After completing postdoctoral training in molecular and cell biology at Yale School of Medicine and Harvard University, she moved to Oklahoma to take an assistant professor position at Oklahoma State University in the Department of Nutritional Sciences. In 2005, she moved to Penn State, she says, to be “closer to the east coast with its research-oriented atmosphere. I am looking forward my career at Penn State.”

Dr. Jean-Marc Zingg is scientist in the Vascular Biology Laboratory at the Jean Mayer USDA Human Nutrition Research Center on Aging (HNRCA) at Tufts University, Boston. He completed his Master’s and Ph.D. in Biochemistry and Molecular Biology at the Biozentrum/Friedrich Miescher Institute (FMI), University of Basel, Switzerland in 1993. After postdoctoral training in Cancer Research at the USC Norris Comprehensive Cancer Center, University of Southern California, Los Angeles, USA, he was Assistant and Privatdozent at the Institute of Biochemistry and Molecular Biology, University of Bern, Switzerland. He is an editorial board member of the journal “Biofactors”, guest editor of the journal “Molecular Aspects of Medicine”, external reviewer of grants, theses and over 40 journals, and member of the American Society of Biochemistry and Molecular Biology (ASBMB).

Dr. Zhenhua Liu is a Research Scientist at Jean Mayer USDA Human Nutrition Research Center on Aging, and also an Assistant Professor at the Friedman School of Nutrition Science and Policy, Tufts University. He received his postdoctoral training from the Jean Mayer USDA Human Nutrition Research Center on Aging (2004-2007) and Tufts-New England Medical Center (2004), Tufts University. He completed his PhD in Nutritional Biochemistry and an additional MS in Statistics from Auburn University, AL in 2003. Before that he had a MS degree in Animal Science from China Agricultural University (1996) and a BS degree in Animal and Veterinary Sciences from Hunan Agricultural University (1993). Nutrition and the prevention of chronic diseases, especially the prevention of gastrointestinal cancer. How dietary factors and metabolically related gene variants modify tumorigenic signaling pathways, with particular focus on environmental epigenetics and obesity-associated inflammation as they may mediate Wnt pathway, a most critical tumorigenic pathway for colorectal cancer. Danny Manor completed his undergraduate studies in Biochemistry in 1982 at Tel Aviv University in Israel and received his PhD in Anatomy, Structural Biology and Biophysics from the Albert Einstein College of Medicine (NY) in 1989.  Dr. Manor held a postodctoral position in the Department of Physics at the City University of New York, where he applied biophysical approaches for the study of ′visual pigments′ and ′GTP-binding proteins. In 1992, Dr. Manor moved to the Department of Pharmacology at Cornell University in Ithaca (NY) where he studied the role of small GTP-binding proteins in malignant transformation.  After receiving a faculty position at Cornell′s Division of Nutritional Science, his studies diversified to include molecular bases of cancer prevention and vitamin E biology. Danny Manor joined the Department of Nutrition in the School of Medicine at Case Western Reserve University as an Associate Professor in 2006.  His research work has been funded by the American Cancer Society (ACS), the National Cancer Institute (NCI), and the National Institute of Diabetes & Digestive & Kidney Diseases (NIDDK).

Dr. Wimalawansa is a clinician-scientist, a faculty member/medical educator for 38 years, a world-renowned expert in endocrinology, osteoporosis and metabolic bone disease, and vitamin D and nutrition. He holds numerous distinctions as an educator, author, researcher, innovator, executive board member, administrator, and philanthropist. In 2000, he completed a diploma in medical administration at the Johns Hopkins University School of Business, and in 2006, he earned an Executive Master of Business Administration degree from Rutgers University. Dr. Wimalawansa is a former university professor, professor of medicine and chief of the Division of Endocrinology, Metabolism and Nutrition, and the director of the regional osteoporosis center, at the Robert Wood Johnson Medical School and Robert Wood Johnson University Hospital in New Brunswick, New Jersey. Dr. Wimalawansa has also served as a professor of physiology and integrative biology and pharmacology, Graduate School of Biomedical Sciences at the University of Medicine and Dentistry, New Brunswick, New Jersey.

Dr. Wimalawansa’s research in pharmaceuticals, peptides, peptide receptors, and metabolic bone diseases was funded primarily by the NIH. He has made many vital contributions to medical research, including development of once a week bisphosphonates therapy, estrogen and bisphosphonates combination therapies, a technique to enhance the efficacy of bisphosphonates, and cost-effective therapies such as vitamin E and nitric oxide donor regimens for the prevention and treatment of osteoporosis. In 1984, Dr. Wimalawansa was the first to develop and demonstrate the value of intra-operative hormone assays using measurements of calcitonin and parathyroid hormones as examples, and how they markedly assist surgical procedures, which are currently used worldwide as a standard of practice. Recently, he developed a highly cost-effective water purification method to improve the quality of potable water, applicable in providing clean drinking water to needy populations worldwide.
